Simple 7 Layer Dip : Party Food / Potluck
Updated: Jan 5
I took this yummy Simple 7 Layer Dip to our annual Smith Family Christmas Party / Potluck in December with my Dad's massive side of the family! I decided to make this classic dish into a slightly healthier version. It was a hit! The bowl was completely empty before the last person made it through the buffet line and it takes no time to make.
Ingredients
31 oz can fat free refried beans
32 oz plain fat free greek yogurt
1 packet McCormick Hot Taco Seasoning
16 oz medium Pace Picante Sauce
8 oz shredded lettuce
2 C fiesta blend cheese
1 small packet cherry tomatoes
3.8 oz can black olives
*I'd like to note that I did not use the ingredients in their entirety; these are just the sizes I had. I made one 8x8 dish for the party and a small bowl for Keith and myself to enjoy later.*
Instructions
Layer 1: Scoop the can of refried beans into a bowl and stir it up until smooth; then spread a layer onto the bottom of an 8x8 dish.
Layer 2: Scoop about 3/4 of the yogurt into a bowl and blend it with 3/4 of the taco seasoning packet; then spread a layer on top of the beans.
Layer 3: Pour a layer of salsa over the yogurt.
*I didn't put layers 4-7 on until we were about to leave. The lettuce can get a little soggy if it sits too long. I stored the half-made dip in the fridge.*
Layer 4: Spread lettuce over the salsa.
Layer 5: Spread cheese over the lettuce.
Layer 6: Cut tomatoes into slices and spread over the cheese.
Layer 7: Rinse olives and spread over the tomatoes and cheese.
Serve with your choice of chips!
I hope you enjoy this simple recipe!
