Quick & EASY Chicken Teriyaki

Another of our go-to dinner options is this super simple chicken teriyaki! You know I'm all about easy meals with few ingredients. This recipe makes enough for us to have this meal twice for dinner, so four servings (Keith eats a lot though)!



  • Preheat oven to 425

  • Add broccoli and chopped onion to baking dish

  • Cut chicken into bite-sized pieces and add to dish

  • Pour entire bottle of Soy Vay Teriyaki Marinade over the dish and stir

  • Bake 30 minutes


  • Add 6 cups of water to a pot and bring to a boil

  • As soon as the water starts boiling, add 3 cups of rice and turn to medium

  • Simmer for approximately 10-15 minutes covered, stirring often

  • When you notice most of the water is gone, turn the heat off and leave covered for 10-15 minutes or until all water is absorbed and rice is a light consistency

  • Fluff it up!

I usually have 1 cup of rice in a bowl with about 4 oz of chicken over top and as many veggies as I want. I also like to add green onions on top. Now all I need is some Netflix with Keith!

465 calories: 75g carbs, 5g fat, 31g protein
